The first full week of November is here, so if you aren’t already in fall mode…get on it!
Last week we got a full-blown snow storm here in New jersey, so I felt like we went from apple cider to Christmas cookies overnight…but alas, fall has returned and I am gearing up by giving you a casserole inspired Meal Plan.
I grew up on casseroles, being a child of a baby boomer, and they all seemed to include Condensed Soup of some sort…so casseroles are homey and cozy to me.
All the meals this week are based in the one pot/casserole vein… perfect fall food!

Monday ~ Lasagna Soup from The Deen Brothers. Serve it up with some crusty bread and a salad.
Tuesday ~ Tater Tot Casserole from House of Brinson. Of course you can serve this with a salad as well! (The pics are shown as individual casseroles, but you can make this recipe just as easily in a 13×9 baking dish)
Wednesday ~ Hearty Chicken Stew with Butternut Squash and Quinoa from Cookin’ Canuck. This is a full, delicious and heart healthy meal all in one pot. Love that!!
Thursday ~ Make some burgers or hot dogs and serve them with these Crack Potatoes from Plain Chicken.
Friday ~ Pizza Casserole from {For Mamas} and you could serve it with a little something green of your choice, salad, green beans etc.

Those crack potatoes are ah-mazing. I’ve been making them for about a year now! And I LOVE a good casserole!
