We are in full blown winter-mode right now.
You have your heavy coat out, your slippers on and your mitten easily accessible.
Winter isn’t my favorite. I don’t like to be cold.
BUT I will say that winter has it’s positives.
I mean, all your bulky sweaters and sweatshirts hide the inevitable 10 pounds you have to put on for hibernation. It’s a science fact.
So let’s discuss what we are going to eat this week. Because with swim suit season a long way off, what else do we have to focus on?
And I will try to give you a few lighter options of full-on winter food. Just in case your elastic is getting tight.
Monday, 1/16 ~ Light Mushroom Lasagna from Ezra Pound Cake. This might be the world’s most perfect food.
Tuesday, 1/17 ~ Grilled Chile-Lime Chicken from Betty Crocker. All you need is some rice and guacamole and you have a delicious meal!
Wednesday, 1/18 ~ A lightened up version of Chicken Alfredo from Recipe Girl. I love recipes you can add bacon to and still call it light
Thursday, 1/19 ~ How about some Honey Butter Pork Tenderloin from Momma Hen’s Kitchen? How good does that sound? Serve it with a green veggie and some Rice Pilaf and that’s a good meal.

Friday, 1/20 ~ And rounding out the week, let’s make a Stromboli. This one from Lauren’s Latest looks Delicious and you can really modify it to suit your taste. Lauren gives a great step by step too!
