Cocktail Friday ~ Mango Pineapple Cocktail

I love mango.  It’s one of my most favorite fruits.  But cutting those suckers up is a pain in my pie-hole.

So I take the cheater route when making smoothies or cocktails with mango.

I buy the already cubed, frozen bags at the supermarket.

 

But, please, feel free to slice your own and freeze.  I bow down to you.

 

Mango Pineapple Cocktail

serves 4

2 cups mango cubes, frozen

4 oz rum

2 cups pineapple juice

*optional strawberries or pineapple for garnish

 

In blender combine all ingredients and blend until smooth.

    I totally buy the frozen mango, too…I was so happy when I first saw it. Love, love these cocktails. Is 8:30am too early? Seems “breakfast-y.” ;)

    I got a mango martini at olive garden last night and I swear they just pureed mango juice with ice and i paid almost $9! This sounds much better!!! And cheaper…. Perfect for today cause it’s supposed to be 600 degrees out :)

    I LOVE mangos…really love those Champagne mangos when you can find them…but also buy the frozen mango bag from Trader Joe’s and not only for smoothies..I just put some in a bowl and an hour (or 15 minutes in this heat), it is perfect (can’t eat frozen since I have a sensitive tooth)…Unlike strawberries or other frozen fruit, mango has much the same consistency after thawed as it does normally. Definitely will be trying this cocktail!
