Cocktail Friday ~ Coconut Margarita

So the end of summer is upon us.

It went fast, didn’t it?

Most kids are already back in school, fall clothes are in full force at the mall (even though it’s still 90 degrees out) and Halloween candy is currently on the shelves at the supermarket.

 

Ahh, summer, your stay was too short.

 

Let’s end it with a cocktail, ok?

And nothing says summer more to me than coconut…

Which leads me to the perfect end of summer drink…a Coconut Margarita.

 

Coconut Margarita

1 cup sweetened coconut

1/2 tsp salt

3/4 cup Coco Lopez or cream of coconut

1/2 cup, plus 2 Tbsp tequila

1/4 cup Cointreau or Orange liqueur

Corn Syrup ~ for dipping the rim of your glass

 

Pour a few tablespoons of corn syrup on a small plate.  Dip the rim of your glass and allow for the excess to drip off.

Pour your coconut on another small plate and sprinkle with salt.  Dip your rimmed glasses into the coconut and salt mixture.

Combine remaining ingredients in a shaker and then serve over ice in prepared glasses, or combine ingredients in a blender with 1 cup of ice and serve in prepared cups.
