Cocktail Friday ~ Lemon Meringue Pie Cocktail

Sometimes you’re in the mood for a cocktail.

Sometimes you’re in the mood for pie.

 

Sometimes it happens at the exact same time.

Trust me, it happens.

 

Only thing missing here is some crust.

 

Lemon Meringue Cocktail

1 1/2 oz vodka (vanilla or lemon flavor is great here)

3/4 oz Limoncello lemon liquor

1/2 oz white creme de cacao

 

Mix in a shaker with ice, strain and serve in a martini glass or  tom collins glass.

If desired garnish with a little plop of meringue.

 

Meringue recipe

2 egg whites

pinch of cream of tartar

4 Tbsp sugar

1/2 tsp vanilla

Beat egg whites and cream of tartar until frothy, add in sugar and vanilla and continue beating until steak peaks form

Spoon on cocktail and toast with a torch.

*makes enough meringue for multiple cocktails

    Also, take lemontini drink mix (I get mine from World Market) and add whipped cream or cake flavored vodka and you have a lemon cake martini! It’s fabulous!!

    Ooooo yum! I bet you could rim the glass with graham cracker crumbs and then you would have your crust too!

    This. Looks. Awesome. Right now, we’re right in the middle of making homemade limoncello (one week down – one to go!), and as soon as it’s ready, I suspect I’m making one (or three) of these !
