Meal Plan Monday ~ 9/24 – 9/28

Monday happened again.

Which means a whole ‘nother week of dinners to make.


Let me help you with a few of my favorites….


Monday, 9/24 ~ Start the week off by making a big old crock pot full of pulled pork.  I love this idea from Add A Pinch of topping a Portobello Mushroom with the pork.  A low-carb alternative to a potato or a roll.

Tuesday, 9/25 ~ I love this Enchilada Pasta from Table for Two.  It’s an easy recipe for a busy night…and my kids loved it too!  I served it with cornbread and called it a day.

Wednesday, 9/26 ~ Remember back on Monday when you made pulled pork?  Time to use up some of those leftovers.  Pulled Pork Nachos are really the way to go!

Thursday, 9/27 ~ I made this Cashew Chicken from Daydream Kitchen this week for the family and I loved it!  Just a few hours in the crock post and you’re good to go!

Friday, 9/28 ~ Pizza Friday!!  This week we’re going non-traditional and doing Chicken Ranch Pizza from Fake Ginger.  Yep.
