It’s Monday!!
Hopefully you got some time off this weekend…but since it’s Monday, people will expect you to feed them.
Siiiiiiiighhh.
Here’s what looks good (and relatively easy) to me this week:

Monday: Buffalo Chicken Quesadillas I can’t think of a better way to brighten a Monday, can you?

Tuesday: Cheeseburger Soup This looks amazing…there are lots of veggies in this soup too, so it’s a perfect way to sneak them to my son.

Wednesday: Garlic and Soy Baked Chicken Thighs I love making chicken thighs for dinner…they are inexpensive and taste great. This recipe combines some great flavors.

Thursday: Baked Tacos This is my new favorite way to make tacos…the melted cheese really makes them better and the shells don’t crack and break when you bite them.

Friday: Cheesy Zucchini and Red Onion Flatbread Switch up pizza night with this yummy looking flat bread.

Love the baked tacos!! I tried these a couple of months ago after finding them on Pinterest and I will never make tacos the old way again. They are a huge hit with my family. I have also repinned the cheeseburger soup but haven’t tried it yet. It looks so good, I’m really hoping my picky eaters will love it! I love checking out your weekly meal plans. There’s always something new that I want to try and my family could definitely use a little variety at dinnertime! Thanks!!
OK. It’s 10:00 am and I’m thinking hmmmm, baked tacos? or chicken thighs for dinner? Love this section of your blog. Gives me great ideas, plus love all the links to blogs I’ve never visited. I’ll have to send you my favorite recipe for baked chicken thighs — butter, parmesan cheese, chopped fresh parsley. Easy peasy. You’ll thank me but YOUR thighs won’t!
Cheeseburger Soup sounds freaking FANTASTIC. I am so hungry for cheeseburgers…and it’s cold enough here to want to have soup! Mmmmm, great line-up this week!
