Meal Plan 3/25 – 3/29

It’s Monday!!!

Spring Break is officially over, and I am officially relieved.

I mean…sad.

I mean…sigh.  Can I have mixed emotions?

Anyways.  This week I’ve got lots of yummy stuff on the menu.  Here’s what we’re having:

Monday:  Crockpot Rotisserie Chicken    We really love rotisserie chicken, so I’m excited to try this recipe!!

Tuesday:  Quinoa and Brown Rice Fiesta Bowls    I love how colorful this meal is — and the kiddo will like picking out ingredients to add to his bowl.

Wednesday:  Cheesy Ravioli Bake    You had me at cheesy.  Plus, this meal can be thrown together in a flash, which I love.

Thursday:  Blackened Shrimp Salads    Another meal that my son will enjoy putting together himself.  The shrimp cooks up in no time, and you can prep ingredients ahead, which is perfect for me — any meal I can prep while the baby is napping is a lifesaver!

Friday:  Thai Chicken Pizza    Seriously — how yummy does this look??  The recipe is super simple too.
