Meal Plan 5/6 – 5/10

Happy Monday!!  Are you ready for a new week?

I, for one, am not.  I spent the weekend with an infant that not only just had her shots, but is also cutting her two bottom teeth.

Fun times!!  Except, the opposite.

Anyways — let’s talk dinner.  Here’s what looks good this week:


Monday:  Healthy Taco Salads    We are trying to eat a little better around here, so I love this healthy spin on taco salads!!

pastaTuesday: Lighter Cajun Chicken Pasta   Another great dish, lightened up!!

Wednesday:  Cobb Salad Sandwiches    I love how fresh and yummy this looks.  Sandwiches are great for a no fuss dinner.

Thursday:  Buffalo Shrimp Tostadas    I love shrimp — such a easy and yummy weeknight dinner, and it changes things up a little!!

Friday:  Chicken Enchilada Pizza    Because, duh.

    One of the pieces of chicken on Tuesday’s dish looks a little bit like one of those Bugle chips. Since the dish is a lightened up option, I think I can add Bugles and be okay?
